“This time of year, Chef's menu features more courses that want white wine over red. If you typically start with richer White Burgundy, consider starting with Chablis so that you can progress to something with more richness and breadth like a white from Northern Rhône or California. Reds that handle meat garnishes this time of year have a bit more acid & edge.
